Serious Eats' Sommelier to Go, Joshua Wesson, sits down with the Fairway Cafe's Mitchel London to pair wine with pizza. The key, Wesson says, is in the bottle's tanginess and tannins.When choosing a bottle to enjoy with pizza, look for "red, young, mouthwatering" wines. "You want something as tangy as the sauce and something with enough tannins to cut through the richness of the cheese," Wesson says. Avoid "big, chewy, can't-see-through-'em wines," Wesson says. Cabernets, Merlots, and Bordeaux are no-gos.
