Chili A basic definition of chili is, a stew made with chilies, cumin, and onion. The other ingredients are all variable. Original chili has beans and meat. Texas chili has no beans. There are recipes with no meats. It all depends on what you prefer. This recipe has meat and beans, more beans than meat at about 2 to 1. I like a thick starchy chili. If you don’t like it that way drain your beans and only use about half of what I used. Tomato products are also optional. I used them in this show, but can be substituted with stock or *cringe* water. Read the first line again, if you have these ingredients you will be good. Greek Salad This is a very quick way to throw together a Greek style antipasto. I guess the only reason that I call it “Greek” is because it has Feta cheese and normally I put olives in it. Take whatever type of jarred peppers that you like. The kind that are in a brine. Use those and some of the brine to combine feta cheese, pepperoni, and assorted olives. That’s it, this way you get the ingredients you want instead of settling for what the store has.
