Ingredients: 3 ea skinless chicken breast cut in 1 inch cubes 2 cups rice, uncooked 3 cups chicken stock 1 can tomato product 2 ea medium onion, diced 1 ea medium bell pepper, diced 1/4 cup spanish olives 1/8 cup brine from olives 1/8 cup jalepeño pepper rings 2-3 tbsp garlic, minced Directions: Saute chicken, onion, peppers, olives, and garlic with spices. Add rice, and saute until rice is coated. Add brine, tomato, and chicken stock. Cover and cook for approx. 20 min. or until rice is done. Remember to add more seasoning than you think is necessary. The rice can take a lot of spice.
