It is also available EVERYWHERE in Laredo and when you see it that often the greyish blue phallic looking thing starts to be irresistable. We had only ever eated cow tongue once before in a Korean restaurant in New York. There it was served thinly sliced and cold, kinda like spongey lunch meat. We decided to stick with Mexican flavours and it turned out very nicely. We would both definitely prepare cow tongue again, although I didn't care so much for the heavy tomato sauce. Next time I think I would want to try braising it, slicing, seasoning it, and then grilling it so it becomes smokey and then squeezing with lime and then serving it in a hot fresh tortilla with some fresh salsa and guacamole... sounds good right?
