Barbacoa is a traditional Mexican dish usually served for breakfast after the cow head has smoked over-night in a pit dug in the ground. Since we didn't really have a place to dig a barbeque pit, we went for the more modern approach of using a smoker -- which we accomplished with the Smokenator 1000 attachment for our Weber grill. http://foodtease.com/2009/09/cow-head-barbacoa
