Travel with us to Darjeeling India where leading permaculturist Rico Zook guides us along the path to learn about Chang a Nepalese Rice Beer which is made from rice, millet and other grains. It uses yeast cakes which traditionally used to come from cultivation of fern plants, but now can be purchased in the markets as yeast cakes. As we learn about how Chang is made we then learn about how the “Tungpa” or “mug” which holds the Chang. Chang has played an important symbolic fole in Nepalese life, both as a show of hospitality and as an offering to the deities. It is a natural fermentation process that is not only a alcoholic beverage but as well very healthy for you in moderation as all mixed brews are.
