Happy Halloween- Chicken Pumpkin Pot Pie

Fall is calling... I wanted to make something hearty and delicious for this episode. Chicken Pot Pie and Pumpkins were the first things to pop into my head, so I mixed them together to create a fun dish that will soothe your winter bones. I roast the pumpkins with some fresh thyme and olive oil, make a gorgeous velvety chicken pot pie filling, then combined the two.
